Gazpacho, a cold soup originating from Spain, is a super easy and healthy way to stay cool this August and get significant amount of vitamins in your diet.

Ingredients:
  • 4 tomatoes (cored & roughly chopped)
  • 1 bell pepper (roughly chopped)
  • 2 cucumbers (peeled, seeded & roughly chopped)
  • 4 cups of tomato juice
  • 3/4 tsp tabasco sauce
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 garlic clove (minced)
  • 1/4 red wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup dried bread crumbs
  • 2 cups ice water
  • 1/2 bunch green onions (thinly sliced)
  • 1/4 fresh Italian parsley (chopped)

Start by placing chopped tomatoes, bell pepper and cucumbers in a food processor and blend to the consistency of salsa. Add 3/4 cups tomato juice to help the mixture blend. Transfer the chopped veggies to a bowl and stir in the remaining ingredients. Cover and chill for at least 4 hours.

Serve in individual bowls (chilled) and garnish with some chopped green onions and parsley.
