Gazpacho, a cold soup originating from Spain, is a super easy and healthy way to stay cool this August and get significant amount of vitamins in your diet.
- 4 tomatoes (cored & roughly chopped)
- 1 bell pepper (roughly chopped)
- 2 cucumbers (peeled, seeded & roughly chopped)
- 4 cups of tomato juice
- 3/4 tsp tabasco sauce
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1 garlic clove (minced)
- 1/4 red wine vinegar
- 1/4 cup olive oil
- 1/4 cup dried bread crumbs
- 2 cups ice water
- 1/2 bunch green onions (thinly sliced)
- 1/4 fresh Italian parsley (chopped)
Start by placing chopped tomatoes, bell pepper and cucumbers in a food processor and blend to the consistency of salsa. Add 3/4 cups tomato juice to help the mixture blend. Transfer the chopped veggies to a bowl and stir in the remaining ingredients. Cover and chill for at least 4 hours.
Serve in individual bowls (chilled) and garnish with some chopped green onions and parsley.
